Quinoa & Mozzarella Burgers

It can be difficult to find vegetarian burgers that are also gluten free and not extortionately expensive.  I’ve found it much cheaper and more satisfying to make my own and quinoa makes a great meat substitute because it’s high in protein. It’s also easy to cook, and has a wonderful texture and taste.

This recipe makes 8 burgers which are rich and herby in taste and have a good meaty texture.

  • 120g Quinoa
  • 1 Vegetable Stock Cube and 350ml water
  • 125g Mozzarella, grated
  • 1 Egg
  • 1 ½ tbsp Gram (Chickpea) Flour
  • 2tsps Oregano
  • 1tsp Chilli Flakes
  • Salt and Pepper to taste

Make up some stock using a stock cube and 350ml of boiling water. Cook the quinoa in the stock for around 20 minutes until the stock is absorbed and the quinoa is tender. Leave to cool.

In a bowl, whisk together the egg, gram flour, oregano, chilli flakes, and seasoning. Add the mozzarella and quinoa and stir until all the ingredients are combined into a stodgy mixture. Use your hand to form 8 burger patties out of the mixture.

Preheat the oven to 190˚C. Heat some vegetable in a frying pan and fry the burgers in batches for 3-4 minutes on each side until the burgers are golden. Transfer the burgers to a baking tray and bake in the oven for 15 minutes. Serve immediately.
